Restaurant Dwars is quite possibly one of the most conscious and unique restaurants in Amsterdam. Priding themselves on using local, organic, seasonal products, they strive to put “Dutch cuisine” on the culinary map. And they do so, as far as I am concerned, very successfully. A charming, characterful, setting and friendly service, really make this a must-go-to restaurant for the conscious urban traveller.
A comprehensive approach to conscious dining
Not only does Restaurant Dwars use locally sourced, organic ingredients from small, sometimes artisanal suppliers, their focus is also on seasonal products - ensuring integrity and authenticity are anchored in their approach to delivering a differentiated dining experience. Cheese from the Beemster, meat from Blaarkopkoeien, lamb from Texel, Wild oysters from the Waddenzee, pure, honest and local. Chef and owner Jo Vaessen rides his bike to his local suppliers to select the highest quality, seasonal ingredients, who then, deliver them to the restaurant, almost exclusively using electric vehicles! Team that with a comprehensive respect for the environment and society in regards to their operation of their business and you really have an admirable and inspiring dining experience.
Beer from small, artisanal brewers
The other unique thing that Restaurant Dwars does, is partner each of the innovative dishes they serve, with 2 different, organic, beers, produced in The Netherlands, almost exclusively by smaller, artisanal brewers. Of course you can choose any of these beers from their menu also, but we love the fact that they pay attention to such pairings, and the times we have dined there, their pairings have been perfect. The beer enhancing and complimenting the culinary treats.
Last but by no means least, the location: An atmospheric, authentic Jordaan house, that borders one of the ancient “hofjes” in this gorgeously atmospheric area of the city. The interior is uncluttered, simple and yet welcoming. The black and white photos of street scenes of Amsterdam leave you puzzling where they are exactly (a great dinner conversation subject for sure!) and the views to the semi-open kitchen allow you to see the culinary magic at work. Service is friendly, knowledgeable and unfussy. This really is a quintessential conscious restaurant, that must be high of your list of places to try.
Dwars breaths sustainability and consciousness
Restaurant Dwars takes their approach to sustainability seriously, considering almost every aspect of their business operation, from the sourcing and transportation of ingredients, through to the training of their employees.
They source only seasonal ingredients from organic, local suppliers. They serve only certified sustainable fish and even seek to have their supplies delivered by electric or environmentally friendly vehicles.
Their organic beers all come from local, almost exclusively, small, artisanal brewers who also pay attention to the sustainability of their operations.
Restaurant Dwars also prides itself on being a recognised training business, and one of it’s core values is respect: for each other in the business and of course to their customers.
